Our PDO Isigny salted Butter (Protected Denomination of Origin) is made in accordance with traditions, and exclusively from the milks of the Isigny terroir. As specified in the AOP technical manual, nothing is added or taken away the butter. Made with the best traditional creams of Isigny (matured 16 to 18 hours), it is famous for its golden buttercup colour and its distinctive notes of milk.

Isigny-Ste-Mere is a co-operative from Normandy, a region recognized for the quality of its milk due to their very unique "terroir". Isigny-Ste-Mere benefits from the cooling microclimate of the Veys Bay, which fosters lush pastures that are carpeted with grasses rich in beta carotenoids and mineral salts. Their PDO butter sheets has been specifically designed for Viennese styles of pastry. This butter has the plasticity required for the making of perfect pastry layers.
