Agar-agar is a natural texturizer derived from seaweed extract and used as a gelling agent. It forms a thermoreversible gel at 92°C. It creates a firm, transparent, and brittle gel that is unstable in the presence of alcohol or acidic environments. It is not freeze-thaw stable and does not recover its structure after being sheared or blended.
Agar-agar is used for a variety of applications, such as gelled inserts, fillings, mousses, and hot jellies for the foodservice sector.
