The dream association of the olive and butter! The silky texture of lemon-olive oil is enchanting for seared scallops or oysters on the half shell, and provides a final touch for steamed vegetables, provides a heady aroma for your risottos, or lends an original tone to your shortbread crusts for strawberry tarts. The olive oil we use is pure Sicilian. Thanks to the island’s warm temperatures, mild winters and abundant sunshine, the olive trees grow in the best possible conditions. The fruit is picked by hand and pressed at the same time as the lemons, which allows the essential oils in the lemons to mix with the oil making the blend even more aromatic. With little oxidation it is only slightly tart, with the lemon brining a hint of freshness.

Jean-Yves Bordier is the last remaining artisan to knead his churned butter in a wooden cylinder, and to sprinkle fine sea salt by hand. While kneading and salting, the butter loses water, and in the process, it "cries" and develops its taste, complexity of areas and a silky texture.
